We then brine & carefully spice the beef cuts, where it will marinate for 24-48h
Air Cured
We DO NOT use commercial curing cabinets
Our products undergo curing at lower temperatures, reminiscent of traditional methods
Following a luxurious soak in a meticulously curated blend of spices, the beef pieces will then be hung for curing in a controlled environment for 8-10 days.
